Vodka Sauce Pasta

Call it Gigi Hadid's pasta, call it basic. CALL IT WHAT YOU WANT! I have perfected this over the last couple of years and when I tell you it is the most satisfying pasta ever..... I mean it.

Ingredients

  • Pasta (homemade, if you're feeling fancy)

  • Tomato Paste

  • Strained Tomatoes (Pomi box to the left is the best!!)

  • Heavy Cream

  • Garlic

  • 1 Yellow Onion

  • Butter

  • Olive Oil

  • 2 oz Vodka (I use Blue Ice potato vodka bc it doesn't taste like nail polish remover)

  • Dried Oregano

  • Chili Flakes

  • Fresh Basil

  • Parmesan Cheese of your choice


Instructions

  1. Start boiling well-salted water for your pasta and cook to al-dente

    1. While water is coming to a boil and pasta is cooking, continue the steps below to prepare the sauce

  2. Melt 2 tbsp of butter and/or olive oil in a large saucepan

  3. On low-medium heat, add finely diced onion and let soften

  4. Add a large pinch of salt and stir

  5. Add finely chopped garlic (3 ish cloves), mix with onion and let cook for 3 minutes until fragrant

  6. Add 1 tbsp of tomato paste and mix very well with onion and garlic, let toast for 2 minutes

  7. Add a large pinch of pepper flakes, 1 tsp oregano and a pinch of black pepper

  8. Turn the heat up closer to medium and once the saucepan is hot, add the vodka, mix and let cook off for 2 minutes

  9. Add 2-3 cups of strained tomatoes, depending on how much sauce you need

  10. Add a 1/2 cup of heavy cream to your sauce, stirring it in very well

  11. Add a large pinch of salt and stir, lowering the heat a little to medium-low

  12. Taste test time! Once you've added the strained tomatoes and cream, the concentrated flavors of the base are thinned out. Take note of how sweet or bland it is, you will likely want to add more salt after this next step-

  13. Grate a buttload of parmesan into the sauce and incorporate well

  14. Taste test 2- see what the parmesan did for the flavor and add more salt as desired

  15. The sauce is pretty much ready! I would chop up some fresh basil, grate more parm and have pepper flakes out to serve

  16. Reserve 1/3 cup of pasta water and drain your pasta

  17. Mix the pasta into the sauce, adding the pasta water as you stir

  18. Stir the sauce vigorously and the pasta will develop that restaurant-style sheen

  19. Serve with basil and parm and enjoy!
